Chicken breast stuffed with broccoli
INGREDIENTS
- 3 large chicken breasts
- salt pepper
- 1 1/2 tsp. In garlic powder, divided
- 1/4 c. With paprika
- 1 cup finely chopped broccoli florets
- 1/2 cup of red pepper finely diced
- 1 cup sweet cheddar cheese
- 1 tablespoon of mayo
- 2 tbsp. Soup of olive oil
INSTRUCTIONS
- Preheat oven to 425 degrees F.
- Season chicken breasts with salt, pepper, paprika and 1/2 tsp. At a tea of garlic powder. Use a sharp knife to cut through the center of the chicken breasts, but not completely, creating a pocket for filling.
- For filling, place the broccoli in a microwave-safe dish and add about 2 tablespoons of water. Cover with plastic wrap and cook in the microwave for 1 minute. Drain any excess water. Add to pepper, cheese, mayonnaise and peel. Mix until you get a homogeneous mixture, then spread the mixture between the chicken breasts, using a toothpick to secure it if necessary.
- Heat a large ovenproof skillet over medium heat, add olive oil. Sear chicken 3 to 4 minutes per side. Cover the pan with aluminum foil and bake in preheated oven for 15 to 17 minutes, or until the chicken reads 165 degrees. Let stand under cover for 5 minutes before feasting.
