INGREDIENTS
5 cups cooked chicken cubes, cooked
1 cup marinara sauce without added sugar
1/2 teaspoon red pepper flakes
1 ounce parmesan, grated (about 1 cup)
1 1/2 cup grated mozzarella cheese (about 6 ounces)
1 ounce of pork rind, crushed
1/2 teaspoon dry ground basil
INSTRUCTIONS
Preheat the oven to 350 ° F and lightly grease an 8-inch square pan
Spread the chicken in the greased dish and pour the tomato sauce on it. Sprinkle with red pepper flakes. Garnish with parmesan cheese and mozzarella. Sprinkle lightly with pressed pork rinds and basil.
Bake f0r 25 minutes, until cheese is melted and bubbling.
NOTES
This recipe can be frozen before or after cooking and it is easy to prepare a day ahead. Just be sure to wrap it with aluminum foil before putting it in the freezer or refrigerator.
