ingredients
For steaks:
- 4 steaks of cube
- 2 cups of buttermilk
- 3 big eggs
- 2 teaspoons of hot sauce
- 1 teaspoon Worcestershire sauce
- 1 cup all-purpose flour
- 1/2 cup of cornstarch
- 2 teaspoons of salt
- 1 teaspoon of garlic powder
- 1/2 teaspoon of pepper
- 3/4 teaspoon of Cayenne
- 4-5 cups of oil for frying
- For the sauce:
- 1/4 cup shallots or finely chopped onions
- 1 teaspoon minced garlic
- 3 tablespoons all-purpose flour
- 1/2 cup of milk
- 1 1/2 cups chicken or beef broth
- pinch cayenne
- Salt and pepper to taste
- Optional: ground pepper and parsley for garnish
Instructions
For steaks:
- In a large bowl, combine buttermilk, eggs, hot sauce and Worcestershire sauce.
- In another bowl, corn flour, cornstarch, salt, garlic powder, pepper and cayenne pepper.
- Dip the steaks in the buttermilk and marinate for at least 1 hour. (2 hours preferred.)
- Dip the steaks, one at a time, in a seasoned flour mixture. Refrigerate for 15 minutes.
- Add oil to the cast iron skillet or frying pan, heat the oven to medium-high heat. Preheat the oven to 250 degrees.
- Once the oil is hot and ready, fry each steak on each side until it is golden brown. Drain on paper towels, then place the steaks on baking sheets lined with parchment paper and put in the oven while you make the sauce.
